The Mora Romagnola is an ancient, autochthonous Italian breed of pig that originates in Romagna. The meats it produces are tasty, soft but compact and quite fatty. The crostino is typically holey, light brown in colour with a layer of oil on the surface, a creamy consistency and the fragrance and flavour typical of meat and offal. The pigs are fed natural, GM-free fodder and this, along with ancient artisanal processing methods that use neither additives nor sugars, guarantee the unique and genuine flavours of times gone by.
