San Patrignano “Square” is a soft cheese made from full-fat goat’s milk only. The milk – from two milkings – is curdled with direct enzyme culture and the addition of calf’s curd. The curd is then poured into moulds and matured for a few hours. It has a thin, mother-of-pearl grey coloured rind. It is square
shaped with sides measuring approx. 20 cm. The cheese is white with hardly any holes and the flavour is pleasingly intense. Maturation: 30 days. Serve with a still, fresh, velvety and medium structured white wine. Availability: April-October.
