“Cave” cheese is born in 2004 in the San Patrignano dairy factory. It represents a strong challenge towards revisitation of classic techniques in Taleggio production. “Cave” cheese is produced with our top quality vaccine whole milk. It is a fat cheese soft pasta structured with a first phase of 30 days seasoning and a second phase of 20 days seasoning in a high humidity cave. Stinging taste.
