A cheese made from full-fat cow’s milk and sheep’s milk, both from our dairy. It is cylindrical in shape, slightly convex and low in height (8-10 cm). It is a soft cheese with a thin, soft, clean and inedible rind. The cheese is mother-of-pearl white in colour with a slight hint of edging. It is compact with even and mediumlarge holes. Originally from the Montefeltro area, this San Patrignano cheese has delicate aromas and persistently fresh and creamy flavours. Serve at 10-12°C. It has a delicate flavour and therefore implies a match with an equally elegant and soft wine in terms of the flavours and aromas. It should be a young wine, regardless of whether it’s red or white.
