Chestnut honey is dark in colour, varying from amber to almost black. It has an intense and pungent smell with its balsamic and floral hints and a bitterish and slightly astringent after-taste. It is usually liquid. There is no crystallisation or, when it takes place, it is very slow. Ideal as a condiment with savoury dishes like cheeses and ricotta. It is mostly used as a condiment and is the perfect companion to mature cheeses.
